Our cocoa paste, with the TIESTO brand, comes from Tocache, San Martín, and is made from speciality cocoa beans, highlighting its origin.

Product characteristics:

This cocoa paste appears as a solid dark brown mass, with a fat content between 48% and 55% and an acidity of less than 1%. It offers fruity, herbal, floral and nutty flavours and aromas. Cocoa mass is a fundamental ingredient in the quality of chocolate, and its mixture with cocoa butter defines its flavour, from sweet options with milk to intense varieties without milk.

The cocoa paste is naturally rich in antioxidants and minerals beneficial to health. With a flavour profile that includes notes of dried fruits, red tropical fruits, light citrus touches and an appreciable bitterness, it is versatile and can be used in baking to produce Bean to Bar chocolates and as a raw material for making cocoa. Or cocoa butter in pastries and chocolates. It meets high-quality standards, with low humidity, 80 to 18 microns fineness, and cadmium levels below EU regulations.

Our production process includes speciality bean selection, roasting, crushing, hulling, refining, conching, tempering, cooling, packaging, labelling, storage and shipping. The shelf life of cocoa paste under normal conditions is 12 to 18 months, supported by a health registration issued by the competent authority.
