With the ripe fruits of the algarrobo, a boil is prepared from which natural sugars are concentrated. Once the algarrobas are boiled, they are pressed. The resulting extract is filtered and then evaporated to reach a viscous result.
It's a great food for its vitamin and protein properties and contains more minerals than honey. Algarrobin is a good aid for strengthening the lungs. The extract can be drunk only as syrup.
It is produced in northern Peru, especially in the departments of La Libertad and Piura where is the tree of the algarrobo native.
It is highly appreciated in the preparation of drinks, pastries and cocktails.
