The plantain banana chips (or Chifle), are very thin slices of fried banana and are a typical food of the Piura region, usually consumed as a side or light snack. CAES Piura makes chifles in the district of Montero (Ayacaba), with 100% organicbananas and oil.

Banana is a typical product of the region, usually grown on plantations with other crops such as coffee. CAES Piura produces both sweet and salted chifles, depending on the ripenessof the fruit, and sells them in 250 gr bags.

After being harvested, the organic banana will be peeled and cut into very thin slices. Those are next directly immersed into boiling oil. Once fried, the crisps are placed on a metal rack to cool and to drain the remaining oil. After light salting, they are packed into bags for shipping. This is a fully artisanal process of production, with all the work done by  hand. Crisps are mainly produced in the Montero district in Ayabaca province.
