Cañete Valley, Herbay Alto, district of San Vicente, province of Cañete, department of Lima, 130 kms south from Lima city. Coastal valley, very close to the sea, located at an altitude of 38 meters above the sea level.
Climate / Terroir:
Subtropical, temperate, in winter 16ºC, and in summer with about 30ºC. Suitable for fruit trees, grapes, pears, apples, quinces, avocados and lucumas.
Guiding system / Irrigation:
Double T and trellis systems. Irrigation by gravity, from Mala river near the vineyard, and also from water well.
Fermentation / Distillation:
- Fermentation at 25ºC in stainless steel tanks.
- Direct distillation to grade in copper stills.
- 14 months in stainless Steel tanks.
- 30 days in bottle before comercialization.
4 Fundos Quebranta elegantly expresses all the richness and character of this variety so typical of Peru. It has a unique profile, with a very good balance between aromas, alcohol and body. A round, harmonious and complex distillate, with banana, green apple and almonds as the most notorious descriptors, it delivers a warm softness and silkiness in the mouth, with a pleasant and long finish. It is really a great exponent.
