Kiwicha is known as Andean grains, the plant’s height varies between 0.80 to 2.5m. The grain is small and the main color of the grains is white or ivory, however it is possible to have seed with colors that varies from black to red.

Kiwicha (Amaranth: Amaranthus caudatus L.) is a plant commonly grown in the Andes Mountains up to 3300 meters. During the time of the Inca and Pre-Incas cultures in Peru, kiwicha (amaranth) was a very valued food, present in every home for daily meals.

Nutritional Value:

The nutritional value of amaranth is exceptional. The main feature is the high value of proteins (between 13-18%), but also have a relatively high content of calcium, phosphorus, iron, potassium, zinc, vitamin E and vitamin B complex.
Thanks to the good balance of protein, kiwicha has a good content of lysine, methionine and tryptophan. Lysine is an essential amino acid for human body and it is very hard to find in most of cereals.
Kiwicha’s fiber is very thin and soft, compared to wheat and other cereals and it contains between 5-8% healthy fats (unsaturated fats).
Kiwicha is, then, an almost perfect food for human nutrition, nutraceutical or functional food, bringing huge benefits to human beings, that’s why the NASA (National Aeronautics and Space Administration of the USA) chose kiwicha as a vital food in the nutrition of its astronauts during their interstellar journeys.
Just to add, kiwicha is gluten- free and high in fiber, becoming an excellent food choice for celiacs and vegans.

Aplications:

Common ways of consumption are in grain, flour, pop ups, parched grains and flakes.
Kiwicha is used in soups, stews, pancakes, porridges, breads and salads, to name some.
Kiwicha flour is suitable for the preparation of breads or pastas, with or without the combination of other ingredients. Other amaranth flour is used in Latin America to produce a variety of products, such as tortillas.
In Peru, the traditional way of consumption in the Andes is in pop ups and instant flour (in combination with milks or soups for kids).
