The amaranth is a grain of Peruvian origin. It is produced mainly in the regions of Cusco, Apurimac, Ancash, Arequipa, Junin, Cajamarca, Huancavelica and Ayacucho.
This food is a source of essential amino acids. It also contains calcium, phosphorus and iron. It is important to highlight that it has more protein, calcium, iron, fiber and magnesium than most cereals. It is also the only grain known to contain vitamin C.
