Widely used in Peruvian gastronomy, it is a source of iron and vitamin b3. The dried yellow potato is made of healthy potatoes, peeled, trimmed and dehydrated. Potato drying is an ancient method used until today in Peru to preserve the crop. To do this, potatoes are cooked, drained, peeled and cut into small pieces, then dehydrated until they lose moisture and take on the appearance of crystals.
