Quinoa (from the Quechua kinua or kinuwa) is a pseudo-cereal belonging to the Chenopodioideae subfamily of the Amaranthaceae. It has been cultivated since ancient times in the Andes of what is currently known as Bolivia, Peru and Chile. Quinoa has a variable content of proteins of high biological value, which can range from 14 to 22% approximately.
