In general, post harvest treatments allow to increase the shelf life of a perishable product by controlling temperature, respiration and ethylene level.
In the case of artificial ripening these processes are accelerated with two main objectives:
- To shorten the duration of maturation
- Homogenize the appearance and maturity of the product.
Not only does it control and adjust the levels of oxygen, carbon dioxide and ethylene, but it also generates vapors that are oversaturated in H2O.
