Yacon is a tuber that is produced in the regions of Amazonas, Cajamarca, San Martin, Huanuco, Pasco, Cusco, Apurimac and Puno.
Due to its fructooligosaccharides (FOS) content, it contribute to the regulation of intestinal transit.
Thanks to FOS, it can be consumed by diabetics because it does not raise the level of glucose in the blood and could become an excellent option for people seeking to follow low-calorie diets.
With the scientific name Smallanthus sonchifolius this food, which is part of Super Foods Peru, can increase "good" cholesterol (HDL, high-density lipoprotein) and therefore helps to control triglycerides and other lipoproteins.
Product presentation
The company offers yacon syrup, which is the concentrated juice of the root, in bulk and retail presentation, in 25 kg packages and 270 g jars (for retailers).
It should be noted that the product can be used as a natural sweetener.
