These olives are harvested ripe on the tree and do not require any treatment prior to their natural fermentation process, where the lactic acid is produced lowers the pH of the product, ensuring its stability. For packaging, its governing liquid is used as part of the brine to maintain its organoleptic characteristics and ensure its proper conservation.
