Obtained from fruits harvest from the olive tree during the cycle of maturation before the veraison and when they have reached his normal size and the coloration of the fruit will be able to range from the green one to yellow straw. Then they are treated by a bleach alkaline, carefully washed several times and conditionated later in brine where they suffer a lactic natural total fermentation. After that fruit is carefully selected and calibrated.
